I’ve spent a lot of time on the road. Between family road trips and the several years I spent touring across the United States as an actor, I’ve definitely put in some miles. And if there’s one thing I know about hitting the open road, it’s that what you’ve got in your ears and have available to eat can totally make or break the long hauls.

I imagine it must have had something to do with not wanting to hear, “are we there yet” a zillion times, but the way I remember things, my parents always wanted to get where we were going as quickly as possible. What that meant to me as a kid was that we had short bathroom breaks, and ideally when we had to get gas. Because of this, snacks were essential.

If you’ve been with me for any length of time you’ve probably figured out that I love food. I love ethnic food of all sorts, but there is a soft spot in my heart for Mexican, Tex-Mex, and Americanized Mexican food. Maybe it’s because it’s super delicious and has the opportunity to be spicy (which I love), or maybe because it’s super easy to make.

Probably both.

6 Quick Easy Salads

I’ll never forget one of the first New Year’s Eves my (now) husband and I spent together. He picked me up at the airport around 6:00 and brought me to his place so I could get ready for the nice event we were attending together while he made dinner. Before my trip, I had brought everything I needed over to his place; from the fancy dress, heels, and jewelry to a hairdryer, curling iron, and hairspray. I was returning from my Christmas trip to see my parents and sisters in Belgium, and I knew that I would be getting ready for a night out when it was already the New Year in the time zone I had just left. Meaning… it was going to be a long night. I honestly can’t remember much of the evening overall or who was there other than two of our close friends, but what I do remember was dinner.

Rob had asked me a couple days earlier when we were Skyping if there was anything in particular that I wanted for dinner that night and even though it was days (and miles) away, I knew the answer immediately.

Do you have plans for Cinco de Mayo?  Yes, I know this weekend is Saint Patrick’s Day, so you’re probably thinking about Guinness, corned beef, boiled potatoes and whisky. And I can’t blame you. I’m a huge fan of a good Irish Stew or Shepard’s pie. But, you know what I like even more?

Mexican food. All of the Mexican food. Mexican, Tex-Mex, Americanized Mexican, and even that random taco stand down the street. Don’t get me wrong, I love food from other Central American countries as well (My sister makes a delish Nica Salad… I’ll have to convince her to share her recipe), but right now, my brain is thinking about Cinco de Mayo, and Mexican.

Yes, I know Cinco de Mayo is more of an American Holiday… I’ve made that disclaimer both times I’ve shared my recipes previously (You can find them here and here). That being said, as I mentioned previously I love this food, and I’ll embrace any reason to eat it. I know I’m not alone because Taco Tuesday is a thing. (And I’m not sad about it, one bit.)

Next Tuesday is Fat Tuesday.  Some people call it Mardi Gras or Shrove Tuesday. Any of them work, take your pick.

Have you ever wondered why it was called Fat Tuesday? I’ll be honest, for the longest time I thought it was because that’s when the church did the Pancake breakfast fundraiser and we ate all the pancakes and bacon. Funny thing is, I was partially right.

Side note: all you people who took French in High School but never clued the rest of us in, thanks for nothing. The translation gras mardi from French to English is… yup, you guessed it. Tuesday Fat. Tuesday Fat. Fat Tuesday. (Face palm)

Easy Gluten-Free Pancakes

When was the last time you had cake or pie for breakfast? Cookies? Brownies? Ice cream or pudding?

Unless you’re my husband, you probably don’t make a regular practice of eating these dessert items for breakfast; and to be fair to him, it’s only a cookie or two that occasionally make it on the plate with his eggs. But also to be fair to him, he eats “dessert” at breakfast fat less than most Americans.

Don’t believe me?

What do you call donuts, coffee cakes and other “breakfast” pastries? How about waffles, French toast, or pancakes smothered in sugary syrup? Heck! Even most of the cereals in a typical grocery store have poorer nutritional consistency than some of the desserts mentioned above.
